The menu

On arrival a traditional Berner Anke-Wegge was waiting next to each workspace.

Follwed by a mid-morning snack of the famours Schinkengipfeli.

Of course, a Swiss cook-out would not be the same without a Chäs-Wurst-Salat as the 'official' started, interspersed with a «Amuse Bouche» of Fondue – I could not resist (the real reason further down...)

As a Bärner, for the main course, I just had to make the team taste a proper Berner-Platte...

To round up the cook-out I made my mother's ‘Grand Marnier Parfait à la Mamele’, with Espresso Martinis to finish...

Thanks to Joelle's exceptional knowledge about Swiss Wines, we had amazing Wine with each dish, matching perfectly. Thank you #AlpineWines

Schinkengipfeli or in English a Ham-Croissant, a mix of ham, herbs and spices...

The official starter awaiting the ladies was
a Chäs-Wurst-Salat
(a cheese & sausage salad), one of my favourites...

A good tip? Always prepare a big bowl the day before – the resting gives the sauce time to really flavour it, improving the taste.
And trust me – even the biggest bowl will be gone in the blink of an eye...

oi-Cookout-Marc_0006.jpg

Tried to have a pretty table for the LADIES...

oi-Cookout-Marc_0007.jpg

I was quite happy with the outcome...

For the starter salad, Joelle #AlpineWines recommend a MÜLLER THURGAU 2014, BACHTOBEL white wine pairing. At first my co-workers were not sure, but after a few bites and sips, they all agreed with Joelle... a superb choice that is light and cuts through the richness of the salad without overwhelming or distorting the flavour of the food.

on-IDLE's own Genie in a Bottle...

I know a lot of you are asking yourselves... why so many dishes? He must be crazy...

You are probably right, but this dish – the Fondue – I had to serve, as Katie our intern, has never experienced the pleasure of melted cheese (in that form).

So I bought the 'biggest' Fondü available...

oi-Cookout-Marc_0012.jpg
oi-Cookout-Marc_0011.jpg

The Fondue was paired with a CHASSELAS SUISSE 2015, CAVE DE LA CÔTE, the same wine we served at this year's Swiss National Day Event in London... What are the little red little fondü-pots for you asking? For the smooth Etter Vieille Kirsch... even the smallest Fondue deserves Kirsch-Dunked-Bread – a tradition we had to teach Katie (and an appertif at this stage was called for)...

oi-Cookout-Marc_0013.jpg

All that tasting slowely got to all of us... the giggling started...

I have inadvertently created a new Fondue-Addict...

After hours of simmering in the biggest pot I could find, the ingredients for the Berner-Platte were ready...

oi-Cookout-Marc_0016.jpg

Preparing the serve up...

oi-Cookout-Marc_0017.jpg

Even after so many starters, the ladies were inpatiently waiting for the main dish...

Served with a smile...

oi-Cookout-Marc_0018.jpg
oi-Cookout-Marc_0019.jpg

hmmm...

oi-Cookout-Marc_0020.jpg

This dish will be difficult for the most hardened of vegetarians to resist...

oi-Cookout-Marc_0021.jpg

Berner-Platte defenitely makes Ané and me very happy... accompanied by home made apple puree and of course the vital THOMY mustard can't be missed...

oi-Cookout-Marc_0022.jpg

Ané is fast becoming famous for her stylish food shots – everything carefully arranged 'just so'...

oi-Cookout-Marc_0023.jpg

Joelle recommended a PINOT NOIR ALTE REBEN 2012, CICERO pairing for the heavy main – something to complement the strong flavours of different types of pork and sausage. It is a little pricey, but worth every penny. This pairing was the hands-down favourite – thanks #AlpineWine.

After a good breather, finally desert! This is my mum's own take on a 'Grand Marnier Parfait'. I could however not resitst and added my own personal touch, a perfeclty cut-out 'M' (thank you Katie) for a designer's touch. Which Font you are asking? it is called Boton Bold...

oi-Cookout-Marc_0027.jpg

And for a pairing of my own, a proper Espresso Martini – a perfect match...

oi-Cookout-Marc_0028.jpg

Sabina's smiles says it all...

oi-Cookout-Marc_0029.jpg

Naturally Leon wants to be part of the action... he adored the shape of the vodka bottle...

oi-Cookout-Marc_wines.png

To summarise... it was a real pleasure to cook for the team... and to introduce them to traditional Bernese Swiss food with a twist. Great food with expertly paired authentic Swiss wines and good company – what more could you want?

If you want to give it a try, you can order these and more Swiss wines on AlpineWines

Next up will be Lubos and Ondra... I hope you boys are ready!
